Decades ago I was given the chore at the last minute to fix something quick at my Fraternity House to feed about 100 people. I went to the locker plant/store and found pork chops on sale so I bought 50 pounds, a 50 pound cloth sack of potatoes, a pound of bulk Taco seasoning. Had enough money left over to get a keg of beer. So then I (nickname was Otto) put it all together on the patio with a keg of beer by my side. We mopped up the sauce with 20 loaves of italian bread. Here is my home version for a quick and easy and simple meal. The amazing thing is how the flavors all meld together but do not mask each of the ingredients. The sauce becomes a gravy from the starch from the potatoes. It is true comfort food. Check out the home version recipe below the fold. Or have a picnic for a 100, lol.
Cube about 4 average peeled potatoes in 1 inch chunks to have ready.
Mix 1 package of Taco seasoning with 1 can of beer to have ready.
Get 4 chops with bones and have a big frying pan heated with a little olive oil to have ready.
Now, brown the chops ever so lightly, then add the potatoes and sauce and cover. Turn the heat down to simmer on low for a half hour. Take the lid off at the end to simmer and reduce the sauce so it gets more like a gravy. But that is your choice.
That is it, simple, easy, fast. Start it when you get in the door, it takes only about 5 minutes for that part. Then relax from a hard day of work, maybe have a cocktail. A half hour later you will enjoy the best combination of pork, potatoes, and seasoning you could ever imagine.
