Good evening folks! Sorry to be late tonight, I thought this date had been taken but no diary has shown up so I'll jump in and we can have an "open thread" tonight.
I'm not planning anything too elaborate for Thanksgiving dinner this year. Work is too crazy for me to pull off a big feast so I'm keeping it simple. I also decided not to do a turkey. We always end up with so much leftover and no time for me to do anything with it. That's better after the holidays when I have time to do things like stock from the carcass, croquettes, casseroles, etc. So, I asked my other half what he would like as the "main" protein instead and he said ham. Spiral-cut, brown sugar glazed, ham. Cool. Now I can start thinking about sides that match well with that.
Stuffing: Something with cornbread maybe? I think that would be a good match with ham. I also have a ton of pears. Comice and Bosc and I would like to incorporate those.
So perhaps a cornbread, sausage & pear stuffing.
Potatoes: I gotta have mashed potatoes no matter what. I'm thinking of this:

Green Beans: While I'm always fond of doing a take on classic green bean casserole, I think these Haricot Verts with Sauce Ravigote would be a nice pairing with ham. Other half loves mustard too;)
Maybe my Cauliflower & Apple Gratin. Get a good sharp cheddar and it'll be killer.
Then I'll also want some sort of corn dish, and something with squash.
I did make some tasty roasted Delicata squash last weekend! Gotta do that again for sure!
Ok, I did say I was going to try and keep it simple, but once I get started thinking and planning all kinds of ideas flood my mind!
