One of my favourite days of the year! I get to indulge in my favourite passion...
CHOCOLATE!!!
And what better way to celebrate, but by sharing recipes loaded with chocolate. I will probably be scarfing chocolate while I write, so forgive the rather smeared page.
I'll start with a simple one. We'll just ignore that orange thingy for today. Just step over it into a world of chocolate..enjoy!
A simple favourite that doesn't take many ingredients:
Dianne's Chocolate Cake
1 1/2 c. flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
3/4 c. butter or margarine
1 c. sugar
2 squares of unsweetened chocolate, melted
3 eggs
1 tsp vanilla
1 c. milk
Sift together flour,baking powder, baking soda and salt. In bowl, cream butter and sugar until light and fluffy. Blend in melted chocolate. Stir in eggs and vanilla. Stir dry ingredients into creamed mixture alternately with milk. ( Make three dry and 2 milk additions, combining lightly but thoroughly after each addition). Turn batter into 2 - 8" round cake pans or one 9"x13" greased and floured pan(s). Bake at 350F for 35 to 45 minutes or until cake is done. Cool and frost as desired.
Another very good and simple recipe for melt-in-your-mouth chewy chocolate chip cookies:
Gord's Chocolate Chip Cookie Recipe
Preheat oven to 350F
Cream: 1 c. margarine, beat until fluffy
3/4 c. white sugar
3/4 c. brown sugar
1 egg
1/2 tsp baking soda
1/2 tsp salt
1 tsp vanilla
Add: 2 c. flour
Mix well
Add: 1 c. chocolate chips
Roll into small balls (about 1" in diameter) and put on greased cookie sheet. Bake for 12 minutes. Cool and indulge.
