What Are Your Favorite Snacking Foods?
After writing serious diaries the past two Fridays I thought we could relax, have a little fun and share some snacks today. What's your favorite
power-snacks or finger-foods? Do you sit down to full meals or spend more time grazing throughout the day? I love all kinds of mini-meals, appetizers, small plates, tapas and snacks and go through various phases, like the multi-flavored popcorn phase, the mixed nuts phase, etc. What do you grab when you're feeling peckish?
Back when I was young and skinny and could eat junk food all day long without consequence (remember those days?) my idea of a great snack was a bag of potato chips, Doritos, or best of all an entire bag of jumbo roasted and salted sunflower seeds. I could eat those until my tongue swelled up. To this day if I'm at a party where there's a bowl of ruffled potato chips I'm gonna chow down. Onion dip? Even more deadly. It's only once or twice a year, right?
But those days are gone, and instead I'll tell you about some of my current favorite California hippie-chick healthy snacks.
Chia Pudding: This has a weird texture, like tapioca, but I'm loving it. Chia seeds, native to Mexico and Guatemala, are fairly faddish right now, but for good reason: They're high in protein, fiber, minerals, and Omega 3's. They stabilize blood sugar and give a high energy kick to your system, while also reducing cholesterol, lowering blood pressure, and aiding digestion. I soak a tablespoon of chia seeds in water for 10 minutes until they gel up and then add a dollop of yogurt and maybe some fresh berries.
Roasted spiced chickpeas: They're low-fat and high fiber, they're crispy, they're crunchy, they're healthy: What's not to like? Drain and rinse a can of garbanzo beans, spice 'em up, and roast them on a cookie sheet in the oven. Check out these recipes for sesame soy, honey cinnamon, garlic parmesan or smoky spiced roasted chickpeas.
Baked kale chips: Sometimes only chips will do. While I don't care for kale fixed any other way this low-fat recipe produces delightfully light crispy chips that dissolve on your tongue. I tear the kale leaves into bite-sized pieces (minus the stems), toss them with some olive oil, salt, garlic powder and just a touch of sugar then bake on low until crispy and awesome. Try it, you'll like it!

The Great Popcorn Controversy:
Popcorn is healthy, right? Well, certainly not movie-theater popcorn, which can have up to 1400 calories in a bag. As a healthy snack microwaved popcorn is not without its issues, what with the microwavable bags being lined with perfluorooctanoic acid and the popcorn itself being loaded with chemicals and additives. And I've always been suspicious of Jiffy Pop (which you can still buy at Wal Mart and which I still think will kill you).
The healthiest version is air-popped kettle corn without any added oils or butters. I dunno, I love it greasy buttery and salty, which is why popcorn isn't exactly healthy for me. How do you like to make it?

Steelergrrl brought tomato plants to give away. randallt handed out large Register to Vote signs along with information handouts on the new North Carolina voting law and a comprehensive guide to obtaining an ID for voting. Asheville Kossacks have been setting the example of GOTV for the rest of us. Kossack cultjake told an informative story on his new work on the precinct level of politics. randallt also made Asheville Kossack nametag lanyards for everyone. I'm impressed with all the ideas he's thought of to Connect, unite and activate his group.

On April 26, a number of us Los Angeles Kossacks assembled at Casey's Irish Pub in downtown Los Angeles for the first of THREE political events, each connected with the huge field of candidates running to replace Henry Waxman in the 33rd Congressional District, which covers the beach areas of Los Angeles from Malibu in the north to Palos Verdes in the south and swings inland to cover some of the more liberal bastions of the West Side. Our candidate today was David Kanuth, the youngest of the 18 candidates and, possibly significantly, the best fundraiser.
