I’m not cut out for phone banking and a little old for canvassing or voter registration. I did the latter in 2008 and it was fun; got 5 or 6 folks a couple weekends.
But I still want to help the volunteers who do the hard work, so every week or so I bring a banana cake over to the local Delaware County Hillary HQ here in suburban Philadelphia (Ardmore).
There’s always a great crowd of hard-working people there and I figure they can use some sweet nutrition that isn’t cheapo donuts or whatever.
So anyway … here’s my recipe. It’s good and sort of healthy, as far as banana cake (or ‘bread’) goes.
Ingredients for 2 loaf cakes
Dry stuff:
- 2 cups all-purpose flour
- 2 cups whole-wheat flour (white WW or pastry WW is fine)
- ½ cup sugar (white or turbinado)
- ½ cup Splenda (you can use all sugar if you don’t like artificial sweeteners but don’t use all Splenda)
- 3 T baking powder
- 1 T baking soda
- 2 tsp salt
Wet stuff:
- 6 well-mashed or food-processed bananas (really ripe ones, soft — or okay, gelatinous)
- ½ cup vegetable oil (canola, light olive, your choice in that area)
- ½ cup nonfat or 1-percent milk
- 1 16-ounce carton egg whites
- 1 T orange extract (optional)
Pump up the jam if you wish:
- Dark chocolate chips and/or chopped walnuts
Method:
- Preheat oven to 350
- Stir dry ingredients together in big bowl
- Add wet ingredients
- Beat with hand mixer on medium until just mixed
- Stir in chips and nuts if using
- Divide into 2 sprayed loaf pans
- Bake for 45 minutes and check for doneness
Bring one to the HQ and eat the other one!
