It’s been really, really hot so tonight I’m heading straight for the recipes. The topic is chilled soup featuring seasonal veggies and herbs. Enjoy!
Creamy Avocado Soup with Mint
I love this for breakfast, it’s like a savory protein shake.
2 avocados, seeded and chopped
2 cups peeled and seeded cucumber, chopped
2 spring onions with greens, chopped
1 cup plain Greek yogurt
1 lime, juiced
1-2 cloves fresh garlic, peeled
1/3 cup loosely packed fresh mint leaves
1/3 cup fresh cilantro
Fresh jalapeño to taste (optional)
Place all ingredients in a blender or food processor and purée until smooth, adding a little water if needed. Cover and chill at least an hour. Serve ice cold garnished with fresh herbs.
Vegan Golden Corn Chowder with Cashews
I fire roasted the corn and sweet pepper, but it’s really good prepared raw vegan. Don’t be put off by the coconut milk, it adds a nice texture and the flavor isn’t overpowering. Sub dairy if you prefer and of course the veggies don’t have to be yellow, just showing off my pretty haul!
4 med ears fresh sweet corn
1 sweet yellow pepper
1 large yellow heirloom slicing tomato
2 spring onions with greens, chopped
½ cup unsalted roasted cashews
1 cup unsweetened coconut milk
1 fresh lime, juiced
¼ cup fresh basil leaves
Slice kernels off the ears of corn, reserving ½ cup for garnish. Place with all ingredients in a blender or food processor and purée until smooth, adding a little water if needed. Season to taste. Cover and chill at least an hour, garnish with reserved corn and sweet pepper.
Watermelon Peach Gazpacho
It sounds like it would be too much, but I subbed watermelon for the chopped cucumber in peach gazpacho and it just works, especially with goat cheese. Try it if you dare!
1 lb ripe heirloom tomatoes, coarsely chopped
2 cups chopped seedless watermelon
1 large sweet red pepper, roasted
2 chopped spring onions with greens
1 large freestone peach, stone removed, chopped
1 fresh lime, juiced
1 tsp balsamic vinegar
½ cup fresh basil leaves
1 diced seeded jalapeño pepper (optional)
salt and pepper to taste
Place all ingredients in a blender or food processor and blend until smooth. Garnish with goat cheese and fresh basil.
