Good evening, Kibitzers. As you may know if you read the comments, we’ve been going through some stormy weather here in Houston. We had a severe thunderstorm on Thursday night that brought hail and high water, and after a nice break on Friday, the rain is starting back up today (I’m writing this in the morning). After we get through today, the sun will be back tomorrow—I think the worst is behind us.
Fortunately, it didn’t flood at my place, but I’ve mostly been stuck indoors due to the weather. Despite (or maybe because of) having all the time in the world on my hands, I’m really at a loss for diary topics tonight. You know that’s the case when I post music, because I don’t do music diaries. But here’s some stormy weather music (or music with vague references to storms and/or rain, anyway) that I personally enjoy—feel free to add more in the comments below.

Dinner tonight is pure comfort. After ruining the dish the first time I made it, I finally remade Chef John’s pork agrodolce:
It’s beyond delicious—reminds me of BBQ in many ways. And it’s really easy. Just combine the ingredients:
3 1/2 pounds boneless pork shoulder, cut into 3-inch chunks
2 tablespoons tomato paste
1/3 cup balsamic vinegar
1/4 cup distilled white vinegar
3 tablespoons honey
1 or 2 anchovy fillets mashed [I substituted a teaspoon of fish sauce]
2 cloves minced garlic
1/4 cup green onions
1 tablespoon minced fresh rosemary
1 tablespoon kosher salt, plus more to taste
1 teaspoon red chili flakes
1 teaspoon freshly ground black pepper
Transfer to a baking dish and roast at 325 degrees F for a couple of hours, turning the meat halfway through. Chef John recommends 2 ½ to 3 hours, but I recommend checking after the two-hour mark, because I burnt mine to a crisp the last time following Chef John’s recommendation. Mine roasted for almost exactly two hours this time. Chef John couldn’t possibly be wrong, so I blame my oven.
