In the beginning I came to Kos and lurked for a few years. Wrote my first diary in 2008. It was a food diary. I love to cook and all things related to cooking, but now in this time, I am very angry at the current resident of the White House. It is astonishing that the resident can be who he is and not be dragged out and vilified. Enough of that...on to the cooking.
This dish was inspired by a British chef living in Lincolnshire. Belleau Kitchen, I made it my dish.
2 sausages vegetarian or not cut into half moons
½ a white onion, diced
3 T butter
1 T lemon thyme leaves
16 oz fresh baby spinach
½ C green peas
1 C mix of heavy cream/milk/buttermilk/kifer, stirred with 2 Tablespoons of flour
salt and pepper to taste
¼ tsp grated nutmeg
4 eggs
I cooked this in a 10” cast iron skillet.
Brown sausages and onion in butter. Add spinach and put the lid on the skillet. Wilt the spinach and then add the milk, nutmeg, salt and pepper. Cook till thickened. Distribute the spinach in the pan, add the peas and the lemon thyme and crack the eggs in the 4 quadrants. Put the lid on and watch the eggs till cooked to your liking. Soft or hard.
This dish is so satisfying to eat with some fresh bread and butter and a good cup of coffee or tea!
