Meatloaf
Just in case anyone has forgotten, let me refresh your memory:

Several years ago I published my go-to meatloaf recipe. Folks liked it but mentioned that theirs was better, easier, more nutritious, less expensive, etc. It’s quite a personal thing since meatloaf is a family standby for many, with much ethnic variety. Mine was passed down from my dad and has stood the test of time as I have spread it to many people. Google says there are over 24 million meatloaf recipes so there are many options. This is updated a bit since I have made a few tiny improvements.
1 ½ # ground beef This can be half ground pork as well. I seldom see that in our markets.
2 tsp salt, or better: 1 salt and one Old Bay Seasoning
one egg
2 pieces of bread, torn up I save all our crusts for this recipe
1 8 oz can tomato sauce (save the can)
1 tbs brown sugar
1 tbs yellow mustard
1 onion, sautéed substitute 2 shallots for a slightly sweeter flavor
½ carrot, grated
Mix all ingredients in a bowl, gently (try to process as little as possible)
Transfer to meatloaf pan and smooth the top. Bake at 325º for 1 ½ hours. At the one hour point pour off the fat into the saved can. This loaf is good hot or cold.

We replaced the crumbling original window box with a nicer copper box. Now our front patio is almost as groovy as our back patio.
